Dessert is one of my all-time FAVORITE childhood memories. The smell of my mom's chocolate chip cookies still lingers in the back of my mind and licking a bowl clean IS my happy place.
In the Summer of 2016, my then almost 2y/o child started displaying signs of eczema, which was difficult for the handful of doctors we saw to diagnose.
Diet directly impacts our health. For us, by removing Gluten, Dairy & Eggs my child's skin condition significantly improved.
When I removed these items from her diet, her skin cleared up a little. Because we were nursing at the time, it occurred to me that I likely needed to join her on the elimination diet. Within two weeks of removing gluten, dairy, and egg from my diet, my daughter's skin cleared up completely.
Since it was apparent we would have to be free of Dairy, Eggs & Gluten; I was determined to learn Gluten-Free & Vegan Baking. Because my child IS going to eat cookies, cupcakes, donuts, ice cream, pies. Everything everyone else gets to eat, and it is *going* to taste good. Not "good, for Gluten-free". Good enough that any palate could enjoy. I learned to make bagels, bread, butter, sourdough, & yogurt.
As an experienced "normal" baker, I spent the ENTIRE year of 2017 wrapping my head around the principles of vegan and gluten-free baking. And tested my recipes at various child-centric parties. At the request of my mom friends, I was also asked to be low sugar. So cane sugar was never included in my baking. And, I also do not add the harmful gums (Xanthan, Guar, Locust Bean) that the majority of Gluten-Free bakers use to mimic the elasticity of Gluten. Yet, my bread products still have bounce & chew while STILL satisfying, and being abundantly nutritious. Truly guilt and allergy free.
There were only two places I could find a treat that fit my daughter's dietary needs. In 2018, together we launch our bakery so we could bring these 100% Organic, Corn-free, Dairy-free, Egg-free, Gluten-free, Gum-free, Soy-free treats to Southern Oregon and Beyond!
