Blueberry Pancakes or Muffins
1 cup All Purpose Flour
1/2 TBSP Baking Powder
1 Tsp Salt
1 Cup Milk or Water
1 TBSP Oil (Coconut, Olive, Avocado NEVER seed oils)
1 Egg or Substitute (1TBSP Chia &/or Flax ground :6TBSP water)
1/2 cup blueberries
INSTRUCTIONS:
Mix dry ingredients. (Hydrate egg substitute in the larger bowl you will add dry ingredients.)
In a separate bowl, large enough to hold dry ingredients, combine all wet ingredients.
Using a wooden spoon, combine the dry ingredients into the wet ingredients bowl in small amounts. Be sure to mix thoroughly and break up any clumps.
Add Blueberries.
Pour into pan (OR, lined muffin tins PRO TIP: Preheat oven to 350)
Flip. OR, Bake in muffin tin for 27mins. PRO TIP: Muffins will need to cool in tins before transferring to a cooling rack.
